Blanch tomatoes for 1 minute in boiling water; drain and remove the skin. Dice the tomatoes into small pieces and set aside.
Toast the bread under the broiler for a few minutes on each side until crispy (you can also toast in a toaster or toaster oven).
Rub the bread slices with the garlic cloves and drizzle with olive oil. Place the diced tomatoes on the bread in an even layer and top with chopped basil. Season with salt and pepper and serve.

• For a cheesy variation, top with grated Parmesan cheese and warm in oven until cheese melts.
• Substitute the whole tomatoes with canned diced tomatoes that have been well drained.
